Aunt Millies Famous Blueberry Muffins

INGREDIENTS

1 ½ cup of flour, put together with:
Dash of salt
¼ cup of vegetable oil, such as Wesson Oil
2 tsp. baking powder
1 egg
1 cup sugar
Add milk, to one cup
Add 1 cup of floured fresh blueberries, 1 tsp.
Add 1 tsp. of vanilla to the mix


After pouring mixture into muffin tin, sprinkle top of muffin with sugar

Preheat oven 375

Bake until Golden Brown appx. 22 to 45 mins depending on size

Note: If you wish to use the recipe to make apple muffins, cut up apples into small
pieces, add 1 tsp. of cinnamon, 1 tsp. of nutmeg, 1 tsp. sugar. Add to the mixture.

Blueberry Yogurt Parfait

INGREDIENTS                                         

  • 2 cups blueberries

  • ¼ cup sugar

  • 1 tablespoon freshly squeezed lime juice

  • ½ teaspoon balsamic vinegar

  • 2 cups drained low-fat yogurt or low-fat Greek style yogurt

  • 1 tablespoon shelled pistachios, finely chopped

Combine the blueberries, sugar, lime juice and balsamic vinegar in a medium saucepan, and bring to a boil over medium heat. Cook for five to 10 minutes, until the liquid is reduced and the blueberries have cooked down to a jam-like consistency. Allow to cool. You should have about 1 cup of thick, jammy sauce.

Spoon 1/4 cup thick yogurt into the bottom of each of 4 tumblers or parfait glasses. Top with 2 tablespoons of the blueberry sauce. Make another 1/4 cup layer of yogurt on top of the blueberry sauce, and finish with another 2 tablespoon-layer of blueberry sauce. Cover tightly and chill for at least 1 hour. Just before serving, sprinkle finely chopped pistachios over the top.

Blueberry Crush Coctail

INGREDIENTS

  • 2 cups fresh blueberries

  • 1 cup sugar

  • 2 cups water

  • 1 oz vodka

  • 1/2 oz lemon juice

  • ice

  • fresh mint

 

  1. Place blueberries, sugar, and water in a saucepan, bring to a boil.

  2. Let simmer for 5 minutes, cool, strain.

  3. In a shaker mix the blueberry syrup with vodka and lemon juice.

  4. Fill with ice and shake well. Strain into 2 ice-filled glasses and top with some fresh mint and a lime.
